[Typical Properties]

Odorless, slightly bitter, odorless in aqueous solution. Sublimation at high temperature, soluble in ethanol, propanol, ether, chloroform, slightly soluble in water. It reacts with copper and iron ions to produce purple or dark green color. PG is insoluble in water and slightly soluble in cottonseed oil, peanut oil, and lard. The pH value of its 0.25% aqueous solution is around 5.5. Propyl gallate is relatively stable and undergoes a color reaction with metal ions such as copper and iron, turning purple or dark green. It has hygroscopicity, is unstable to light, decomposes, and has poor high temperature resistance.
