Diallyl disulfide (DADS) is mainly used as a precursor for synthesizing diallyl polysulfides with higher polymerization degree, and is also one of the raw materials for synthesizing allicin. In the food industry, DADS can be used to enhance the taste of meat, vegetables, and fruits as a food additive. In addition, DADS also has a wide range of biological importance, including pharmacological effects such as antioxidant, anti-tumor, anti infection, prevention and treatment of cardiovascular and cerebrovascular diseases, regulation of liver drug metabolism enzymes, and anti neurodegeneration.
